[BUG]: CI runs on no longer supported CTK versions

Describe the bug
Due to #245 we need to bump the minimum required CTK version to 11.5.
Our CI pipeline currently uses CTK 11.0 and 11.2.
How does that even work right now?

Expected behavior
CI should run on CTK 11.5 and 11.8.
