Update Open API definition for new routes

With all the new routes in place, the Open API definition has become quite obsolete.

We need to do a lot of work to get it in line, with the new routes and the new path parameters.

This is mostly fixed now. There could be a few things here and there that need updating, but most of the new routes are now in place.
