Why 3 history entries when resigning the old way?

• First one: the lambda changes to to-sign : OK
• Second one: kinto-signer updates last signature date and status : OK
• Thrid one ? kinto-signer updates the last signature date only : ??

On resign the new way, we have 3 entries instead of 2:

• flip to to-sign by user
• flip to signed by kinto-signer
• an extra one that just updates the signature date

Resigning the old way is not supported anymore (Collection already signed error is returned instead)
