Update dependencies to pass Snyk checks and fix docker-compose file

What did you expect?
We want the pipeline to succeed so that we can merge new code and docker-compose to work when ran locally.
What actually happened?
Currently, the pipeline fails at the Snyk checks, due to some dependencies that need to be upgraded.
Also, there is an extra line with a variable in the docker-compose file, which needs to be deleted.
