Field from is prefilled, can not save it.

Is there way to save this setting?
What if i have different newsletters, can i have different from field email?
The initial values are configured via the Extension Manager. But if you already sent a specific page and try to send it again, then it will reload the settings from the previous Newsletter.
Many of those values are overridable via TypoScript.
