There is often a problem with recognising I as |
Is it possible to add custom substitutions like these?

Hi! Dictionary for words substition makes sense, I'll add the task to backlog (but it's definitely not for near updates).
As for your current problem, what engines have you enabled? That issue with "|" usually happens with EasyOCR, and enabling TesseractOCR, WindowsOCR (or disabling EasyOCR) could help

This is linux, so only Tesseract is available.
It's a low specs laptop, so I've never tried EasyOCR.
