Move Registry from Dockerhub to Github Packages

Describe the solution you'd like
Stop using Dockerhub and start using Github Packages (like we are doing in the new external-secrets repo).
What is the added value?
Dockerhub has rate limits now, and Would probably be simpler to keep all our workflow inside Github.
