Any way to use this app without exposing the daemon ports? (i.e. using just the deluge-web API/UI)

Its an entirely unnecessary exposure when deluge-web works just as well. I can't seem to find any way to connect to a deluged server that way with this client. The main thing stopping me is that the client requires a username, however deluge-web does not utilize a username to authenticate, just a password.

No it is not. Deluge WebUI has no user. Radarr, Sonarr, Lidarr, and Ombi all connect to my Deluge server on a different host at :443 with only a password.
